Honey balsamic carrots are an easy way to turn simple carrots into a falvorful homemade side dish. Recipe featured in our 2019 Holiday Gatherings issue as part of our Holiday Handbook.
- Preheat oven to 375°. In a bowl, mix honey, balsamic vinegar, olive oil, salt, and pepper.
- On a baking sheet, combine carrots, thyme, and 3/4 of glaze, ensuring carrots are coated as evenly as possible. Roast for 15-20 minutes or until the carrots begin to caramelize.
- Remove the baking sheet from the oven, flip the carrots, and pour over the remaining glaze. Return to the oven until nicely browned and sticky. This can take up to another 20-25 minutes depending on the size of your carrots.
- To serve, pour over any remaining glaze from the baking sheet and sprinkle with parsley.
