Fried Ham, Potato and Swiss Croquettes

This recipe, courtesy of Smithfield, takes your leftover Smithfield ham and mashed potatoes from Easter, and turns them into crispy and indulgent croquettes!
- Heat oil to 350 degrees in a large pot or fryer
- In a saucepan, melt the butter and whisk in 1/3 cup of flour to make a roux
- Whisk in the milk and bring to a simmer. Cook for 5 minutes then allow to cool
- When the béchamel has cooled, combine it with the mashed potatoes, ham, and Swiss cheese
- Form the croquettes into 2-inch-long cylinders
- Whisk the eggs with about 1/4 cup of water, then dredge the croquettes through the flour, then the egg, then the breadcrumbs
- When all the croquettes are breaded, fry them in batches until golden brown and hot throughout
- Serve immediately
